David Chang’s latest episode of Mind of a Chef is dedicated to desserts, and while Christina Tosi came on to demo her brilliant corn cookie crust strawberry ice cream cake, we were particularly intrigued by Alex Stupak and David Chang revealing what all of us knew about foams all along: it’s just Cool Whip.
Alex demoed a “skim milk foam” which had a bunch of fancy molecular components, but really was basically whipped skim milk. That’s it. He piped it onto a plate with sliced strawberries, and boom! You can make that on Top Chef and call it Strawberries With Milk Foam, when really all you’re making is strawberries and Cool Whip. Busted.
