Full disclosure: we understand Dr. John perfectly. But the charm of his Top Chef New Orleans Quickfire judging, we suppose, is that no one else had any idea what he was talking about. For example, he described his perfect hot sauce, which the chefs had make from scratch for this challenge, thusly: “I can dig that flavor that’s got a hip tang to it. If it has flavor nicety of the highest order, and it has tang nicety that mixes in? Killer sauce. When I hit it, I can’t quit it.”
Did we mention that the first words out of his mouth were, “I know y’all are gonna do a hip maneuver.”
