Graham Elliot has shuttered his Greenwich, CT restaurant Primary, which only opened six months ago, and was staffed by senior members of the Chicago Graham Elliot team.
After shuttering both his Michelin-starred eponymous flagship restaurant and his sandwich shop in Chicago, Graham decided to focus on his more casual spot Graham Elliot Bistro, his duties as culinary director of Lollapalooza, and opening this new concept in Connecticut. It seemed an odd move based on his strong ties to Chicago and LA (where his show MasterChef films), and, ultimately, it proved to be a bad bet.
Says Elliot that the restaurant “ultimately did not transfer to the Greenwich market. (The owners) eventually decided to take the space into a different direction; one Merlin (Verrier) and I didn’t feel was the right fit for the Graham Elliot brand.”
The investors and the landlord for the space blame slow business in spite of good reviews for the shutter. Elliot is currently working on a cookbook, training for the Chicago marathon, and has recently undergone a major weight loss after a sleeve gastrectomy last summer.
