Tonight marks the second installment of David Chang’s PBS series Mind of a Chef, produced by Zero Point Zero and narrated by Anthony Bourdain, and it promises to deliver on its solid premiere. First, Rene Redzepi joins the party as David visits his Copenhagen kitchen to tackle some uber-fresh shellfish and freshly foraged greens. In the clip below, Rene sashimis a still-beating, just-harvested scallop, and then pseudo-creepily relishes in watching the creature’s “final breath.” The episode also features kimchi, as curated from a bizarre PBS Japan cooking demo, and the many, many joys of fish sauce discovered in the Momofuku kitchens.
