By and large, most chefs claim that a good sharp knife is the most important tool in a kitchen. (Ruth Bourdain, however, will claim that her favorite tool is Rocco DiSpirito.) But ask Alton Brown what his favorite tools are, as Serious Eats did recently, and he’ll respond with some really, really counterintuitive tools. He’s not talking about the kooky, pulled-out-of-thin-air tools that he popularized on Good Eats, though — anyone remember the beef jerky dehydrator he made out a fan, some string, and a stack of air conditioner filters? — he’s talking about the most basic of basic tools ever.
