After David Chang and Jimmy Fallon played a very thorough game of catchup on last night’s Late Night With Jimmy Fallon, including an update on the new issue of Lucky Peach, David’s new PBS series with Anthony Bourdain, his latest Apple Store-esque Momofuku location in Toronto, and his Hurricane Sandy Relief pop-ups, Chang finally got to the cooking.
His dish was a nod to the latest issue of the magazine, which explores how Chinese food influenced other cultures’ cuisines. So he whipped up an Italian pasta dish with Chinese elements and techniques, including a “parmesan” garnish that was really chickpea miso.
“Like garbanzo beans?” Jimmy Fallon asked, stunned.
“We’ve been messing around with a lot of fermented products,” David Chang assured him.
Cue jokes about the hallucinogenic properties of fermented foods.
