As Matt Lauer astutely pointed out, if there’s one thing most of you have in your house this Hurricane Sandy-ruined Halloween, it’s pumpkins. So, Gail Simmons stopped by The Today Show this morning to show off some tasty snacks using the seeds inside. Don’t throw them away! Or the pulp! Think of the delicious pies you could be making in your cabin fever-deranged state. Exactly.
After demonstrating proper toasting methods, Gail threw the seeds into a basic dough with her “favorite kind of pumpkin seeds” — chocolate chips. Voila! Hurricane Sandy scones. If you, like us, hunkered down this Hurricane weekend with little else but your jack-o-lanterns and a 72-ounce bag of Nestle chocolate chips, this is the perfect treat to distract you from your granola bar/cereal/pasta routine of the past four days.
