Bugs, Branches, And Butter: Everything The Chefs Are Eating At MAD

Image credit: Nicola @souschefnicThe brainchild of Rene Redzepi, MAD’s second Symposium brought hundreds of chefs and food lovers to Copenhagen for a two-day conference on the future of the restaurant industry and the food world, and the responsibility chefs now have to society at large. Currently, the conference is in its second day, with speakers like Wylie Dufrense, Ferran Adria, Fergus Henderson, and Danny Bowien on the program.

Though we’re not in Copenhagen (and we’d give anything to escape this ridiculous heat wave!), there are lots of people tweeting their experiences and sharing their thoughts on everything from eating bugs, to thinking about the future of agriculture, to watching Johnny Iuzzini get down in a luchador mask. If only we were there to eat Redzepi’s ice cream…
