If you’ve ever worked at a restaurant, you know that most staff meals look nothing like the food served off the menu. But at Noma, Rene Redzepi puts a little extra care and attention into his “family meals” — and asks his staff to do the same.
He tells Nowness:
“The staff meal — the “family meal”, as we call it — is literally a family meal. I see these people more than I see my family. Since I was 15, this has been the main meal of my life. I’m 35, so almost 20 years this has been the meal where I sit down and relax. It’s really important to me that we try to sit down, relax, and have a few minutes of togetherness.”
As for what they eat, he has few rules. “The only thing that matters to me is that we have a delicious meal,” Redzepi explains. “It has to be well-flavored and cooked with patience and commitment. And I want something warm, I want a dessert, and I want a salad.”
