On tonight Parts Unknown, Anthony Bourdain traverses the Québécois wilderness, goes ice fishing and beaver hunting, eats seared foie gras and potato puree à la Joel Robuchon in an ice shack, and hangs out with chefbros Dave McMillan and Fred Morin of Joe Beef.
One lucky local had the honor of serving Tony his first beaver, served in a rich stew, complete with blood broth. It looks insanely tasty, for the record. Beaver tail (which is really spoon bread) didn’t go so well, though, by which we mean they almost burned down their campsite.
