WATCH: Let Rene Redzepi Convert You To Vegetable-ism

If only we had people like Rene Redzepi readily available to teach us how to make an entire meal out of vegetables — then we’d cut down on our carbon footprint significantly. (As it stands, though, we only have fat Jamie Oliver.) So with bitter envy, watch this video of Bon Appetit’s contributing editor Adam Sachs as he learns how to make an entire feast of vegetables with Noma’s chef, which is paird with an article where Redzepi lays out the rules of making a meal out of nothing but veggies. Most importantly: think small plates, not enormous entrees. “You don’t replace a hunk of pork shoulder with one big central vegetable dish. Think in terms of smaller plates with a variety of flavors.”
