Warning: do not watch this video if you’re on any sort of diet, because after you’ve watched it you’re going to want to eat fried chicken with a sense of urgency that was previously only felt during medical emergencies.
In the most recent clip from PBS’s The Mind of a Chef, James Beard Award Winner Ashley Christensen and Edward Lee get together to show us how to do fried chicken right. For Christensen, homemade fried chicken has always been a part of her life. “I don’t think we ever went out and ate fried chicken. When I was a child, my mom made fried chicken all the time, and my dad was a hobbyist beekeeper, and so we drizzled the fried chicken and honey.”
Christensen brines her chicken for 12 hours, and then soaks it in buttermilk with all-purpose flour, salt, and toasted ground peppercorn. She then tosses all of the chicken into a paper bag and shakes it up before frying it in oil. The sound of the chicken frying is nothing short of glorious. Once it’s done, she adds a bit of the salt.
Then, she warms honey, adds a few chilis, cloves of garlic, thyme, and a bit of butter. She drizzles the whole mixture on the fried chicken. We need some of that now.
