WATCH: David Chang Continues His Crusade In Favor Of MSG

Poor, poor, bullied MSG. It’s the Edward Scissorhands of condiments. Everyone thinks that it’s going to harm them, give them heart palpitations and hot flashes and maybe even cancer/leprosy/the Andromeda Strain. And all this, even though, as David Chang says in this speech from the MAD Symposium, there are no studies that have proven that the umami-giving MSG has any negative effects on health. In fact, plenty of foods already contain natural MSG (tomatoes, parmesan), or artificial MSG (Marmite, Vegemite) — so why the hate on MSG in Asian foods? Chang tackles this question, as well as how he plans to help people overcome this fear.
