The secret to amazing, Momofuku/Rai Rai Ken/Ivan Orkin-quality ramen noodles, according to this video from Bon Appetit/interview with Francis Lam, is a really, really, really, really, really big machine. Normally, such a notion would be counterintuitive (aren’t we supposed to love hand-crafted foods as a way of Sticking It To The Man?), but as Sun Noodle manager Kenshiro Uki (and dad Hirohito) explain, it’s the only way to ensure uniform quality.
