Every time Mario Batali has a talented sous chef who could run his own restaurant, he keeps them in the fold by giving them their very own restaurant. One of his newest, Chi Spacca, run by the equally talented Chad Colby, is the subject of this gorgeous new video from Nowness.
Also the subject: salumi; beautiful, gorgeous salumi. And offal cuts, too. “As opposed to thinking liver was a penalty, the liver, because there is only one, was a celebration,” Batali says in the video. “I thought [my family ate liver] because we were exotic. I found out later it was because we were poor.”
Hah, rich people are missing out.
