In this video from Jeff Scott’s Notes From A Kitchen series, a camera follows Sean Brock on a contemplative walk in the woods through Wadmalaw Island, SC, where he gets inspiration for a dish of pork ribs with salsify, antebellum oats, truffle, and sea island onion. Naturally, the inspiration comes from watching the cutest wild pigs and their baby piglets hunt for food with their widdle snouts.
“The sounds of those pigs crunching on acorns and rooting through the dirt, and finding things to eat, your senses become more alert,” he says. “And as you’re standing there, you start to pay attention to things like smell, and sight, and sound. For me, I’ve got an inspiration from that many, many times.”
