Top Chef: Texas winner and James Beard’s Best Chef: Southwest 2012 Paul Qui will be opening the first brick-and-mortar location of his food truck empire East Side King in the back room of Austin’s live music venue Hole in the Wall. In a short film documenting the opening, Paul’s team reveals that, while working out of Hole in the Wall is a huge step up from the trailer business (running water, etc.), they’re still considering this a baby step towards opening their own, free-standing restaurant.
ESK’s food philosophy strives to serve “something you would feel great eating every day,” thus, secret weapons from their “greatest hits” menu include bacon ramen and squid ink curry ramen. We already feel great about this! All day, every day.
As for their venue? Paul reveals he’s perfectly happy to share the space with an Austin mainstay: “Anyone who’s gone to UT in the past 40 years has probably got a drink here, because the drinks are really, really cheap.”
