WATCH: How to Make el Bulli’s Spherical Olives

 

The upcoming documentary Constructing Albert takes viewers into the fertile mind of Albert Adrià, the brother of Ferran and arguably the most crucial player in el Bulli’s success. Want proof? He invented the spherical olive, that magical little bubble of juice that masquerades as a real olive. In this video, one of his line cooks at TICKETS makes the famous dish, and it involves…quite a bit of work. Unless you just happen to have alginate lying around, of course.
