WATCH: David Chang Admits Momofuku Can’t Afford Beef

 


Have you been noticing a “duck-heavy menu” at Momofuku Ssam Bar lately? Well, it’s because the restaurant budg won’t allow for as many beef and pork options as the days of yore. Yes, David Chang himself admitted that his Momofuku chain is having to make some frugal spending choices — like buying enormous amounts of ramen ingredients up-front to lock in their wheat price from distributors — to stay afloat.

But this isn’t a problem just for the Momo family. David addresses rising food costs’ effect on the public with BloombergTV, and while he acknowledges that, in the grand scheme of things, it’s probably a good idea to think about how McDonald’s keeps their Big Macs at $0.99 while the price of beef skyrockets, he worries better quality food won’t be as accessible to most Americans.
