WATCH: Make April Bloomfield’s New England Clam Chowder This Summer
Almost as old as the “which came first, the chicken or the egg question” is the question of whether New England or Manhattan clam chowder is better. I prefer Manhattan, though I know I’m in the minority. In this clip from PBS’s The Mind of a Chef, April Bloomfield and Anita Lo agree that New England wins out, and together they make a pretty classic version of the soup, but with a Spring twist.
In addition to clams (that they when clamming for themselves) and the usual ingredients, they throw in fava beans, peas, spring potatoes, and garlic scapes.
